If you have enough miles, you could book a one-way mileage award to MXP to start your trip, and then buy your round trips originating in MXP, i.e.

7/12 one-way award JFK-MXP

7/16-19 round-trip purchase MXP-JFK-MXP

7/22-?? round-trip purchase MXP-JFK-MXP

etc.

Your trips would then have Saturday night stays. I don't think this would run afoul of any rules, plus it's possible you'd benefit from lower fares by buying the round-trips from Italy as opposed to the US.
