My sister who just finished her PhD last year, bought herself an AF transatlantic ticket from North America to Turkey in cheap economy class. She absolutely loved her experience on AF, even in just economy class because she said the FA treated her very well and there was wine/champagne served in economy class and very good food. Then a few months later, she needed to attend a wedding of a friend in Greece on short notice, so I used my miles to redeem her a business class ticket on Swiss one-way and return in Agean C / LH First Class. No matter who impressive Swiss C or how friendly Agean was or even how glamorous LH transatlantic F was - she just never raved as much about any of them when compared to her AF economy class flights 2 months earlier. Yes, they were nice, she said but for some reasons, she just doesn't rave about them. She even refused to eat on LH F if you can understand that, because I can't.

Until the LH FA basically begged her to eat.
That's why the review of airline products is highly subjective and personal. There are good reasons why humans are regarded as complex beings, hence airlines like AF can get away with offering relatively little catering if they can compensate from other areas.
I agree the personal touch can make a hell of a lot of difference, but the alternative explanation is that the impression one gets from a flight is largely tainted by (1) novelty and (2) cost/value for money. Your sister may have expected some rather dismal treatment on a cheap ticket and be impressed by what she got. I bought a few LGW-NCE with Aer Lingus for £27 return including all taxes and fees. I loved the flights because I was expecting 'Ryanair' but got comfy seats, early flights, and could get 3 seats for myself each time. Great. For her significantly more expensive LH/LX flight, she might have expected something significantly better and realised that for such a hefty price, LX C class is really mediocre. I'll admit I have usually felt more frustrated when something went wrong with my AF 'K' class tickets than with my cheap 'N' class ones!
