1) Unlike some airlines, AF does not offer the latest NEV ('nouveaux espaces du voyages') on certain routes but on aircrafts which may do almost any route so there is no guarantee. Bear in mind the older versions have completely disappeared and the next older versions have almost completely disappeared so your chances of getting the new version are progressively increasing but cannot be guarantee, and the difference, while not that 'visible' is actually quite 'feelable' in my opinion (sorry for the barbaric word I just invented!)

2) It depends of your fare class and fare rules. Cheapest fares won't allow changes or only with a rather high fee on top of fare change, more expensive ones will allow changes but always within the validity of teh original ticket (so don't buy a ticket that has a max stay of 30 days if you think you might need to stay 45 days after all or you'll be in trouble).

3) good question. I believe the answer is yes you would but am not 100% certain.
