Unless for some reason the bathrooms in the lounge or in the terminal with adequate facilities were not available, I don't see why parents would do such a thing in a public place.

I've never noticed changing tables on an aircraft - where are they? Are they those pull down Koala bear ones? I honestly have never seen them.
On many aircraft, there is at least one bathroom with a pull-down changing table, with the benefit of easy access for diaper disposal and washing hands.
