Go to Tas. It is pretty easy to do. I fly down the Tuesday after MG on a very cheap Virgin Blue flight (think Virgin America) and had 4 days in TAS. I staid in Hobart and took some trips out to places like Port Arthur. Do some research and figure out what trips you would like to see or what adventure activities you fancy.

Also whilst in Sydney head out to the Blue Mountains. It is a truly stunning place to visit.
