As for transfers - luggage checked through by AA should be forwarded straight over to EI at terminal 1, so you won't have to do anything. You can follow either the flight connections signs and go that way, or just exit T3 as a normal passenger and follow the signs for T1, then clear security as normal with your boarding pass for LHR - DUB and proceed to your EI flight. T3 - T1 (they're connected via underground passage) isn't a long walk really.
Thanks Colmc. Glad to hear that the terminal distance is a short walk. I think that I'll have to check in with EI at Terminal 3 as AA will not issue me boarding passes for the EI connection. I guess I could check in online with EI and print BP before I leave JFK, but I'm concerned about missing the connection.

How does the interline work? Do I ever see the checked bags while clearing customs?

As far as the itinerary goes, I've got three record locators, one for each jfk/lhr segment, and one for the lhr/dub roundtrip. AA told me that I'll have to inform AA at JFK check-in of the connection to DUB. Likewise, when I check in back at DUB, I should give EI my AA LHR/JFK flight info.
