You are right re. looking for upgraded seats for LAX-HNL. No C so it needs to be booked in F.

However, when I tried to book LHR-LAX (C) and LAX-HNL (F) using miles, I was told by the ICC agent that the highest booking class counted for the entire route, i.e. it was an F redemption, not C. I did point out that there was no domestic C to no avail.

The standard of service on domestic F in the USA is barely comparable to European C, and the slightly improved seat does not justify (at least in my opinion) the extra miles.

Paying for the entire trip in F would have made the redemption very 'overpriced' - so I stand by my comments above.
