The problem is that while services like timatic (which I believe that Delta uses) have detailed info on immigration regulations, this info is not necessarily available to the relevant station staff of the airline in question and they would usually (and understandably) view Israeli stamps in the passport as a problem when travelling to Arab or even all Muslim countries.
Also I notice that many airline (particularly those of non-Arab or non-Muslim countries) online booking systems have a default setting in generating an error message when trying to book a flight from Israel direct to any Muslim country (or so it seems to me). I think I had that problem with LX.
