Remember when looking for HNL-LAX/SFO the aircraft are 2 class so you will be looking for First class not business. Between UA/US/LH/LX/NZ/AC I'd have thought you will be able to find business class on the transatlantic sector without too much trouble unless travelling at a peak time e.g. Xmas. AC have decent availability HNL-YVR from the times I have looked as long as you have a range of days that you can travel. Of course like you say CO will improve the situation a little but their flights won't be bookable until November or whenever they join.
