I always have a book to read. For flights of any significant length (say, more than a couple of hours), I usually have a book of puzzles (crosswords or kakuro) to do. And I often have some needlework.

I've never seen anyone do it, but it strikes me that origami might be a very suitable way to occupy one's time in flight.
