EURail pass for Italy - how does it work?

Hi - I will be taking three train trips in Italy in July - Rome to Venice; Venice to Florence; and Florence to Rome. I am considering getting the EURail 3 day 2 person pass, as I will be traveling with my mom on all trips. However, I have studied the website and cannot figure out a few things about the passes -

1) Can I choose which train I want to be on with the EURail pass? (e.g., can I pick a direct train from Rome to Venice or is there some chance I will have to take a connection)?

2) Are these eligible for the Italian Eurostar trains (which I have heard are nicer) or only for the regional trains?

3) When do I make a reservation for the train (do I have to do this online or is this done at the train station)?

4) Is this really cheaper/more convenient than just buying tickets at the station?

I would really appreciate your help with these questions - I am nervous that EURail is just a travel "arranger" and will guarantee you three train rides but that they might have many connections, leave at awkward times, etc.
