As far as I am aware, you got what was technically required for an overnight MX according to the COC. That was, the hotel stay and a booking on the next available flight. The requirement for payment for getting you in late is in the situation of an IDB. That is, when the flight leaves, but they don't board you because the flight was oversold. Of course, they give out compensation for people who volunteer not to get on the flight instead of IDB'ing people to serve two purposes - 1: to not deny someone a seat who wants one, creating a p-o'ed pax who tells everyone s/he knows, and 2: often being able to give out less compenstaion because IDB compenstation is regulated, whereas they can negotiate with people who volunteer to give up their seats. If you're flight went MX and was leaving from an EU airport, you likely would have been given extra compensation as required by EU law.
As for the bottles, I agree that is a tough one. UA can't really help you to carry it on - the TSA has an official rule that you can't bring liquids past security - UA has no recorse to make an exception. As for packing it, as a frequent flyer, I would assume you would have to question that you would be offered help in packing it the next day. I would have been highly skeptical of this claim. It would have been nice, but I doubt they even have the supplies to do so. The agent who told you they would help you pack it was certainly in the wrong.
