French Laundry - What would you do?

I have a question on which I’d like your opinion. In two weeks my husband and I are heading to the San Francisco area. As a wedding gift to us, a friend bought us lunch/dinner at French Laundry whenever we’d like to go. Ideally we’d like to work it into this trip if at all possible. We land at 10:20am at SFO and our lunch reservations are at 11:30am. I know that is not enough time to get from SFO to the restaurant, but they said they would hold the reservation for a “reasonable” amount of time. The thought is that if we are on time, there is not a crazy amount of traffic and the planets are aligned we would be able to make it just before noon.
Here is the part where your words of wisdom would be welcomed:
- French Laundry has a 2 day cancellation policy. If you don’t cancel prior to the deadline, you will be charged $100/person, so $300 for us (the friend is coming too)
- There is no other time in our schedule (or the restaurant’s apparently) where we could fit in the visit
Obviously, if the flight is delayed or cancelled, we are up a creek… but, it is an AM flight which is not as likely to face delays out of EWR than other times of the day.
A friend says that it was “the best culinary experience of his life.” So, do we chance paying the fee due to a delayed flight or reschedule? What would you do?
