CO has flights to IAH at 6, 710, 810, 10... so picking a time right in the middle of that is probably why they chose what they did. Also, CO uses 2 753's after 9, so perhaps that's another factor.
I was looking at the fall schedule since the IAH service on Alaska doesn't start until fall. Maybe I'm missing something but I see a 0600, 0710, 0755, 1140, 1225, 1550 and 2345 departures. I didn't see anything between the 0755 and 1140 flights. I also noticed that all but the 0600 are on 737-800's.
