Flights can and do arrive and depart from almost any gate available. However there are few T5A gates that can handle 747/777 arrivals and departures, so most end up in T5B. That said, the first HKG flights generally tend to arrive at T5B.
For your departure, just check the screens when you clear security and if the gate is posted, then use that info to determine which lounge you will use. T5B gates are now regularly posted up to 2hrs before departure or as soon as the aircraft is parked at the gate.
