Sakae Sushi in Burlingame, CA (close to SFO airport) is relocating currently, but they serve arguably the freshest and best selection of sushi in the SF Bay Area. They can be pricey though, an order of chu-toro/otoro can be ~$16/$22. The sister restaurants Yuzu and Noboru (same source of fish but not as wide a selection) are good substitutes for Sakae.

-simple tamago nigiri. When the egg "omelette" is made with good eggs, made fresh, and with good technique, it's my favorite item to close out an omakase meal.
