I have *G on Air NZ but will be starting over with a different airline this year and try to get up to G with them (either Thai, or UA, or AC – haven’t decided yet). I was wondering to what extent you can use one Gold card to obtain benefits while using another (entry level) to get points.
- I assume (?) that I can use the lounges, even if at check-in I have given a different FF number?
- Can I check in at the bus class counter?

Yes to both, if you have your *Gold card on you. In some places you may need to convince the "bouncer" why you dont have *Gold on your boarding pass.

- I have given my air nz ff number when booking my ticket for my next (SIA) flight from NZ to London but once I have signed up for another programme, want to change that ff number and have the points credited to the new programme. Can I do that when checking in?

Yes, or change at lounge/gate. But beware that changes dont always work properly. Check the boarding pass(es) carefully.
I notice from your other threads you were complaining about how hard it is to requalify while flying discount economy. You may not be aware that certain fare classes on SQ mean
no credit for all SQ sectors on the whole itinerary. AFAIK this applies for all the *A frequent flyer programs. If you search in Star forum or SQ forum you will find out which fare classes this applies to so you can check whether you will get any credit at all for your NZ to London trip.
