The OP has made a reasonable attempt to resolve with the merchant, without success. Chargeback is therefore fully justified, and will require much less effort, and get more attention from the merchant.
Fully concur! OP was fair and tried to resolve amicably so go down the 'charge back' route thus naming and shaming - maybe they will think a little harder next time as to how they treat their guests.
