I Go to HK 5 times a year. i always stay at the intercontinental. (tsim Sha Tsui Tsoutsai Sadim) The service is great, rooms are nice and the View...Best in the world.
However I'm American, go to HK for business and I stay there because I am most comfortable. You may prefer a different hotel. Some people prefer the Penn across the street because of it reputation, but I find it too stuffy. The 4 seasons on the HK side is really nice but connected to IFC so it feels like you are staying in a mall.
The Jr. Suite at the Intercon is not that big...but comfortable for 2. The Steakhouse is amazing, Nobu is overrated and like every other Nobu in every other major city.
Call the hotel Directly and negotiate a room. You should not pay more than $4,000 HK per night.

Island shang is nice, but they have let go 15% the staff so service might be slow. Never been to the Grand Hyatt.
