Given the quality of the raising of chickens and sweet 'taters these days, I'm not sure the current diet is doing much to protect your dogs from cancer, and messing with deboning (unless you're buying boneless for less than $2 a pound) is a lot of work. Come to think of it, with only those two components, your hounds are short of some key nutrients. While I wouldn;t feed my Jack Russells KFC, I be just as likely to reject the diet you're proposing.
On the other hand, I'll sure cook those two foods for myself, having recently expanded my sweet potator culinary spectrum to include an awfully tasty biscuit...I guess I'll name it "Ham & Yam" biscuits (although most sweet potatoes we see in US stores are not "yams" at all.
