I'm intrigued by your selection of Kowloon Shangri-la. Is it because of the price? This is correct a 5-star hotel but ranks at mid/lower tier of 5* hotels in HK. The view of the harbour is from a distant and way below IC & Pen.

BTW, is it your first time in HK? One day seems kind of insufficient.
