Sydney: Shangri-La or Park Hyatt for the view, The Establishment for style
Ayers Rock: Sails in the Desert
GBR/Cairns: Shangri-La Cairns for a city hotel. Peppers Balé followed by Sea Temple Beach Villa for resorts, both at Port Douglas

I am still not sure if Qualia really warrants the price tag.
