SFO is always a -200 due to its greater range.
IAD always a -200 as it operates on the days SFO doesnt. (though a -300 has popped in on occasion)
ORD mostly a -300 tho -200's make regular appearances and will do so over the summer
NYC 105 mostly a -300, 111 and 109 will swap and change regularly
BOS will swap and change regularly
MCO usually a -300

There is apparently a "master plan" for the schedule of the A330's, but for operational reasons, delays, tech problems etc, the aircraft on the day will sometimes be different to what was planned.

Btw, just noticed - assume you meant EI-JFK & EI-DUB in the first line, not EI-JFK & EI-ORD
