Thanks for all the great ideas. I was able to see what was available in E+ by pretending to buy each flight. Ended up changing our days to 3/23-3/31. Ended up paying only $665 x 2, and $605.60 for one with a 10% off coupon.
I went ahead and spent the $349 for both myself and one of my Daghters to buy the economy plus seating for the year. It will be worth it since we have another trip planned to Hawaii and one to London this year.
