Orders should always taken from front to back and if choices are not available status should be used, the crew should return to the passenger and explain that their first choice is not available.
I'd love to say that this is what I've experienced it on my flights but it doesn't seem to be the case. The crew taking the orders start telling people that they have run out, before taking their order, therefore limiting the choices. I haven't ever seen the crew taking orders and then going back to passengers to tell them that they couldn't get their first choice.
Sounds like they are not following procedure?
