The 753 does not go to Europe as part of scheduled service.
The different versions of the 777 are only available a couple days before flight when the equipment is assigned, though I believe almost all of them are done with the retrofit that creates the two version.
CO does not use the Hawaii/Micronesia version of the 767-400 to GVA.
CO also doesn't fly IAH-GVA nonstop, so I'm guessing he's flying IAH-EWR-GVA-EWR-IAH which explains the 753 segments.
