It sounds like LHR, CPH and ZRH are really throwaway brief connections. Why don't you spend 60- 80,000 points (Y/J) and fly from Vancouver to Dublin returning from Madrid to Vancouver, then spend another 20,000 points on a Europe reward going from Dublin to Helsinki and Helsinki to Madrid. Rent a car to tour around Ireland and drive to Galway - it is only just over 200 km from Dublin.

Lots to do in Spain and Ireland.
