For all intents and purposes, economy on a 767 has the same seats as on a 737 or 757 although they have 1" greater pitch and about 1/2" greater width. However, one of the nice things is that the seating is 2-3-2 so if you are traveling with someone (as you are), you can sit together without a middle seat. I would try to get seats in row 16. Failing that, if you do sit together, you might now want exit row seats as they usually have unmovable armrests. Also, according to CO's website, there are no rows with restricted recline.
