Add a 100-mph headwind, on a 6-hour flight, and that's like flying 600 additional miles at no headwind. 2700 + 600 = 3,300 which is approaching your range. Add fuel for a diversion, plus reserve, and it it's possible.

I trust they did the math and wouldn't be offloading people/bags if it wasn't necessary.

As for the FA's comments, that was pretty lame. If I had the time, I'd be gate-checking whatever I could find to try to score a VDB/IDB.
