In particular, in some cases the inventory of Buy on Board items are owned by the catering vendor until they are sold, and United just gets a commission on their sale. This is true for several airlines which started BoB programs -- they catering vendor takes the risk and the airline gets a smaller share of the reward in exchange for not really having any investment.
