As an MVP Gold on a coach fare lower than "H" class you are eligible for a complimentary upgrade starting at 72 hours provided U space is available. There may be available seats for sale in F, however revenue management has to release those F seats into U inventory before anyone can be upgraded using any upgrade instrument including MVPG Certs. That being said, F seats can be released into U at almost any time but on PDX-OGG it's highly doubtful.
You can call periodically, but the chances of U being available at the time you call is slim to none. You'd really just be wasting your time on the phone. Even if you wanted to use your upgrade certs U space has to be available when you request the upgrade. You cannot be waitlisted for when a U seat opens up.
Do you have the BofA companion cert? Have you "done the math" to see what it would cost to buy 1 seat in F and the other F seat at the $50 companion fare? That would guarantee you'd be in F and you wouldn't have to play the waiting game.

is correct on when the upgrades are released. However I would not give up hope that PDX-OGG will not release more U for paper cert upgrade. Last year I flew SEA-OGG - booked in March and left in August. I checked availability online (there are a couple good websites that allow a search of this) and found availability around May for the flight for 2 seats. There is no rhyme or reason that I've discovered...yet
