Basically, you're inquiring about two very solid premium services to Hawai'i that shine above the rest. The CO service and the NW/DL service are the only ones that approach the quality of international business class, while all the others are simple domestic F on a very long flight.

Basically, both services have good meals. The CO service has brought back the menus and is a little closer to a true international business class meal, while the NW service (the DL ATL-HNL flight is NW, staffed by NW crews) is a slightly watered-down international business meal service but still excellent. There was one less course on NW's main meal the last time we flew it to HNL (actually the A330 from MSP-HNL), but still overall an excellent meal service. There was no appetizer course, but the salad was dinner-plate size, which more than made up for it. The quality of the food on all courses was surprisingly excellent. No sundaes, but the macadamia nut ice cream and mango sorbet were excellent and gave the flight an "island" feel, as did the orchids in the FAs' hair and orchids in the lavatory.

Seats: again both very good for a long flight. NW's 747-400s (regardless of whether in NW or DL paint) have the new WBC seats, same as the A330. I believe they have the older-generation coach seats, which creates some confusion on what generation seats the 747s have. Having flown on both these seats and the CO BF 767-400 seats, the biggest difference is that you have to spend a little time figuring out the WBC seat and adjusting it to your body (especially the thigh support while still on the ground). The CO BF seats are comfy the second you plop into them, while the WBC seat seems a bit hard and uncomfortable at first. Once adjusted, however, the NW WBC seat became the most comfortable ride and gave me the best nap I've ever had. Please read my trip report on the A330 MSP-HNL on airliners.net for more detail.

You should consider adding a third option to your list: connecting via MSP to the A330 to HNL. MSP's an easy connection, and the A330 is a very nice ride, too.

Overall, given my experiences, if it were me, I'd choose whatever connection was the most convenient overall, provided comfortable connection times, and got me into HNL in time to either get to my hotel or get an easy interisland connection at a reasonable hour. Once I land in HNL, I seem to have about 2 more hours left in my body before I crash completely and like to have any driving done before it gets dark, due to fatigue.
