I mostly have experience with HIX in Germany.
Breakfast always at all properties is perfectly fresh and all exp. dates are ok (I allways have an eye on that). Even fresher than in some HI hotels.
So no problems in Germany. ^

But I´m amazed of you talking about omlettes.
In German HIX properties just boiled eggs are offered.

But hey, I prefer a small but fresh, than a large and overaged offer
