It looks like they use the Amex to guarantee your check. You still write a check and present your Amex. The hotel cashes the check. If the check is not honored by the bank, they charge your Amex.
But...why not just use a debit card and the ubiquitous ATMs?
Gold and Platinum (and I think Preferred Plus/Business) have enhanced check cashing benefits up to $300 at most properties, but there may be individual properties not providing that benefit.
