I was wondering if anyone here has been to Cabo with an infant. I've got a couple of questions... We're going in June and DS will be 9 months old. We'll be going with our friends and their 10 month old and possibly my parents. We're staying at the Playa Grande resort and our room has a kitchen.

The number one thing that may be useful to you is to realize you are not going to the wilds of Africa. You are going to a very Americanized tourist place.

Your info says you live in Austin. I would think you could handle MEX if you had to go through there. You do not have to be fluent in Spanish to travel through an airport successfully in Mexico. I don't think US considers Mexico an international destination and will charge the checked bag fee; you have to have a TATL flight to avoid this.
Why wouldn't you consider Mexicana with an infant? Why would you think the cars are so old in Cabo that you wouldn't be able to use a seat belt? Of course you can rent a minivan if there are any available. Most of the major car companies have rental offices in Los Cabos.
Eating out can be cheap or pricey; there's lots of options. Drink bottled water and avoid ice if you are concerned about the water.
You may want to do some research on Cabo San Lucas and you could probably answer most of your own questions. Google and tripadvisor would be helpful for you.
