Aircraft substitutions happen from time to time. Emirates only have 5 (?) A380's at the moment, so if any go tech. then a substitution will be necessary.

I've always had menus, so it sounds like you just got unlucky. Similarly, food & wine is usually great. Not sure why it would be 'low quality' just because of an aircraft substitution.

Now you're just being silly. Did someone chop your legs off? Just stand up and walk to the galley for a few minutes. Have a drink and maybe a chat. If you sit still for 15 hours, then you are asking for trouble whether it's a B777 or an A380.

Each to his own I suppose... you just sound as though you were pissed off because you didn't get the A380, and thus are criticising every other aspect.
