Welcome to flyertalk and the VS forum!^

Upper Class reward seats may become available during the year ( and close to the departure date).

However the MCO route tends to have limited availability ( only 14 UC seats per aircraft) and it is a very popular route ( However in the current cliimate ,it might become easier)

You will be able to use the miles for Upper Class ( you may have to phone flying club to do so)
