PVR to IAH to EWR - enough time in IAH to transfer?

Mrs. DoggyDaddy and I are going to Puerta Valallarta, Mexico next month. I am a little concerned about the flight back, as I assume we have to go through customs in IAH, retrieve our bags, re-check them to EWR, go through security, and get to our gate, which may mean another terminal. The scheduled time in Houston is 1 hour and 42 minutes. Our details are as follows:

Wed, Feb 18, 2009 Puerto Vallarta, (PVR) to Newark Liberty International Airport, (EWR)
Depart: 04:35 PM - Arrive: 06:58 PM Puerto Vallarta, (PVR) to Houston, TX (IAH)
Continental Airlines Flight 2104 operated by EXPRESSJET AIRLINES INC DBA CO EXPRESS (on Embraer RJ135/145)
Class of Service: Economy
1 Stop - change planes Houston, TX (IAH) Connection Time: 1hr 42mins
Depart: 08:40 PM
Arrive: 12:54 AM Next day Houston, TX (IAH) to
Newark, NJ (EWR) Continental Airlines Flight 410 (on Boeing 737-800)
Class of Service: Economy
Total Travel Time: 7 hrs 19 mins

As you can see, we are travelling peon class. and we have no status on CO.

I have searched the CO thread but have not found anything to help, only people transiting the US with a final destination in another country.

Does it appear that we will have enough time? Any helpful hints would be appreciated, especially with getting through security the fastest and getting something to eat, as CO sees fit to give us no food all the way from PVR to EWR. Also, can we have liquids in our checked bags from Mexico to the US? I think I read that the Mexican authorities would not allow this. How can one fly with some good Tequilla then?

Thanks in advance,

DD
