You can
pre-book your tickets with Southern (registration required). I have never encountered a long wait at LGW for train tickets though tbh. Also you might want to combine on that ticket a day-pass for the Underground. I'm not sure if you can buy on board. FWIW on South-West Trains you were able to buy your ticket on board.

Try the
National Rail site for train times, I find the Southern timetables confusing to read especially for tourists. The NR site is much better just put in the times and dates and it will show you available trains. From the timetables you can usually see how many stops a train has to make.
Also be aware that the train leaving Victoria won't say "Gatwick Airport" on the departure board as the destination at the top in big letters. It will say "Brighton" or "Tonbridge" or "Horsham" and then in the list of stops you will see "Gatwick Airport".
