It's more than just $1400 for upgradeable fare. You'll also have a co-pay for the upgrade with miles, which could be substantial, ~$250 each way? I agree that you should just buy the cheapest ticket and settle in E+. Then see if they have UFC when you fly and consider buying the upgrade.
