CDG is a rather strange and odd airport. I run the JFK-CDG route quite often and AA runs out of a Terminal 2 Hall A, JL out of Terminal 2 Hall F and AF will depend as they move flights around from time to time - best to call. Here is an AA map and here is an AF map.

At CDG, there are ample shuttle buses and trams for you to escort your mother as far as you can and then get to your flight. The way AA's terminal runs, the AC is behind security and the terminal is really small. Think street, check in, security, outbound immigration then gates. It's more of a 'wide' airport than 'deep' airport. I think the farthest you will be able to take your mom will be to security. If they don't stop you at that point, immigration will definetly be a hamper for you. You technically leave FR and the EU once you clear that point and will have to re-enter FR/EU to leave Hall A in order to get your flight. Unless you can convince AA that she needs your assistance boarding, I would plan your farewells at security. As there is next to zero seating around the departure level (might be some plastic benches on the arrivals level below). There are some cafes and stuff or if you want a comfy scene, there is a hotel (Hilton) I believe in the middle of the terminal complex.
