I'd agree that Maui is too much for just one week. We're going for the 3rd time in July but always 12-14 days (including other islands). It's a full day there and a full day back - just not worth the hassle for 5 days.
If you've already been to Orlando, San Diego is a great choice. I was there a few years ago with my kids - 6 and 2 at the time - and found plenty of great things to do for a week.
