8 days in Argentina - itinerary help!

After much deliberation about where to go in South America, my fiancee and I decided to visit Argentina for 8 days....mostly because it's a beautiful country but also because we found some cheap fares there from Toronto to Buenos Aires (direct flight was $650USD return!)

We will be arriving at noon on Sat March 21 and leaving in the afternoon on Sun March 29. This leaves us with 8 nights and 8 full days to explore a couple cities.

I am looking for some help to decide how to organize the 8 days. We would like to spend 2 nights (two full days) at Iguazu going to both the Argentinian and Brazilian side. The rest of the time we will be in BA checking out the food, wine, shopping, and historical sites. My fiancee and I are both casual wine drinkers so we will definitely stop by Gaucho100k's store while in the city

A couple questions for those that have traveled to (or currently live in) BA:

1. Would it be best to go to Iguazu during mid week or should I fly out on the Sunday after I arrive? is it best to be in BA during the weekends? I read there was some sort of market on Sunday. We would also like to see a football game and possibly polo game so if they are usually on weekends we will go to the falls during the weekday.

2. What side trips would you recommend for a day or possible two? what would be the best way to get there?

3. I am currently booked at the Sheraton Liberatador on cash & points so it's pretty cheap ($45/night plus some points). Would you recommend staying in some of the other trendy areas like Palermo Soho or Recoleta instead? For a tourist, are those areas out of the way from the main sites and shopping?

I also came across a lady who will help arrange certain aspects of the trip for a reasonable fee ($100). She seems pretty well reviewed and her website has lots of information. Has anyone here used her before? Her website is: http://www.batravelguide.com/
