My mom had a similar issue on American with a travel voucher. In order to get around this; she was able to book a cheap one-way fare (like $50 or whatever) using the credit; and the remainder was re-issued under a new voucher with a new expiration date.

Not sure if this will work with a United Ticket Credit but maybe someone else knows?
