As others have said, I would go for the 3pm flight, you are coming off a 13+ hour long haul flight, and if it slipped its arrival by 30 mins you would be really stuffed.

Also, I would not favour your changes of being able to jump the earlier AC flight, ( unless you are booked on a full fare economy or higher ticket class),

YVR is a fairly pleasant place to spend a hour if you have to, reasonable food etc.

As an aside, once 2010 and all the madness are over, I suspect that many having a short layover in YVR will jump the Canada line Skytrain for the 26 minute ride downtown. This public transit expansion could help increase the attractiveness ppl hubbing through YVR in the long term.
