I'd take a colectivo (shared van) from the airport to the hotel. Should run you $9-12 per person. You'll probably make a few stops along the way to drop off other passengers, but it is no big deal. Wait until you get outside the terminal to buy your tickets. Brush off the touts inside the terminal. The ticket seller will speak passable English and will write down your destination for the driver (who probably will understand a nominal amount of English as well). "Hyatt Caribe, por favor" ought to be the most Spanish you need for the journey.

On the way back to the airport, take a taxi. It should cost you about $20-25, about half what you'd pay to take a taxi from the airport.

The rest of the time, taking the buses on Kukulcan Blvd. is easy and inexpensive (7 pesos). And, the buses run 24 hours a day.
