This is my first time taking a train in Europe that crosses national boundaries. How do I get a passport stamp for each country I enter? Is there a customs official on the train that stamps it, or do I need to find a customs point at the train station at the country I arrive in?

Crossing borders by train in western Europe is pretty seamless these days. However, even within the Schengen territories, quite often spot checks are carried out. These consist of two or three officials, often in plain clothes, selecting a couple of passengers per coach to ask for their ID. They can often ask fairly detailed questions about who you are, where you are going and what you are carrying, which can be pretty uncomfortable in front of your fellow passengers.
