It really depends. I've flown on Flight 11 (JFK-SFO, departs 7:15 PM) several times this year and it's always been nearly empty; maybe two or three dozen passengers on a (182-seat) 757.

On the other hands, the redeyes I've been flying SFO-JFK and SFO-EWR are pretty popular.
