I really do sympathize with your situation, but honestly, this isn't a JetBlue-specific thing. You'll find this same policy with any major airline. Baggage liability is governed in part by the Warsaw Convention and the Hague Protocol. If you want your belongings to be insured over $3,000, you can purchase additional liability insurance during check in.
I know it seems difficult to believe, but situations like the one you're in truly are rare occurences.
