I'm not sure about UA but at the HK station Finnair was checking in and taking baggage. It appeared that all of the other airlines, also, there, were doing the same. Not sure if it's same day only, but I did read that you needed to check in 3 hours before you flight if you wanted to use the train station for check-in.
